Qinghai, located in the inland northwest of China, sits in the northeastern part of the Qinghai-Tibet Plateau, known as the Roof of the World. It is named after Qinghai Lake, China's largest inland saltwater lake. This vast land of 720,000 square kilometers, with an average elevation of over 3,000 meters, is the source of the Yangtze River, the Yellow River, and the Lancang River, and is known as the "Source of Three Rivers" and the "Water Tower of China." Qinghai Lake is the soul of Qinghai. This giant blue mirror is set between golden grasslands and snow-capped mountains. In summer, rapeseed flowers surround the lakeside; in winter, the lake surface freezes like a mirror. It is beautiful in all four seasons. Chaka Salt Lake is known as the "Mirror of the Sky," with the lake surface perfectly reflecting the blue sky, white clouds, and human figures, like a dream. On the vast grasslands at the foot of the Qilian Mountains, cattle and sheep roam in herds and seas of flowers stretch to the horizon. The hundred-li rapeseed flower fields of Menyuan are China's most spectacular floral wonder. Hoh Xil is one of the last pure lands on Earth, where Tibetan antelopes run freely in the uninhabited region. The butter sculptures, murals, and barbola of Kumbum Monastery are world-renowned, and it is a holy site of the Gelug school of Tibetan Buddhism. Qinghai is also an important gateway to Tibet—the Qinghai-Tibet Railway departs from Xining, crosses the Qaidam Basin and Hoh Xil, and reaches Lhasa directly, and is known as the "Sky Road." Here the sky is as blue as washed, the air is pure and transparent, and the starry sky is incomparably brilliant, making it an excellent place to escape the noise of the city and cleanse the soul.

Qinghai Liangpi
The most representative snack of Qinghai, made from wheat flour into cold skin noodles, served with chili oil, vinegar, garlic juice, mustard, and other seasonings. The texture is chewy and smooth, sour and spicy, and appetizing—a great cooling treat on hot summer days. On almost every alley in Xining there are liangpi stalls, making it the daily snack locals love most.

Hand-Grabbed Mutton
The most traditional hospitality dish in Qinghai, using Tibetan sheep raised on the plateau, cooked only in clear water with a small amount of salt. The meat is tender and fresh with no gamy smell. It is eaten by hand, dipped in a little pepper salt, to taste the purest freshness of the mutton. Paired with a bowl of hot mutton soup, it is the warmest flavor on the plateau.

Ga Mianpian
A home-style staple for Qinghai people, made by pinching dough into nail-sized pieces and boiling them, served with mutton, potatoes, radishes, and other ingredients. The pieces are thin and chewy, and the broth is fresh and rich. There are also many variations such as fried mianpian and braised mianpian. A bowl of steaming hot ga mianpian is the most stomach-warming presence on the cold plateau.

Tianpei
A specialty dessert of Qinghai, made by fermenting highland barley or oats. It has a sweet-and-sour, soft-and-sticky texture and a rich vinous aroma. On the streets and alleys of Xining, small stalls selling tianpei can be seen everywhere, and it is especially refreshing when eaten chilled in summer. Tianpei is also a traditional food of Tibetan and Tu people, carrying the life wisdom of the plateau people.

How to Get There
💡 Xining Caojiabao Airport is Qinghai's largest aviation hub, with direct flights from Beijing, Shanghai, Chengdu, Guangzhou, and other cities. The Qinghai-Tibet Railway (Xining → Lhasa) departs from Xining, and the Lanzhou-Xinjiang High-Speed Railway connects Lanzhou (1 hour) and Xi'an (4 hours). Departing from Xining is convenient

Xining's altitude of 2,261 meters generally does not cause altitude sickness, but trips to Hoh Xil (4,600 m+) and Nianbaoyuze (4,000 m+) require plateau preparation
