Hand-Grabbed Mutton
A traditional dish of Gansu's Hui and Tibetan peoples, using locally free-range Tan sheep or Tibetan sheep, boiled in clear water with only a small amount of seasoning to preserve the original flavor of the mutton to the greatest extent. The meat is tender with no gamey smell, eaten by hand dipped in salt and pepper. Linxia's hand-grabbed mutton is the most famous in Gansu.

Niangpizi (Cold Skin Noodles)

How to Get There
💡 Lanzhou is Gansu's largest transportation hub, with direct flights from major cities nationwide. The Lanzhou-Xinjiang High-Speed Railway connects Lanzhou → Zhangye (3 hours) → Jiayuguan (4.5 hours). Dunhuang has its own airport with direct flights from Beijing, Xi'an, Chengdu, and other cities. Lanzhou to Dunhuang by train takes about 7 hours (bullet train)
